- 2 cups canned chickpeas
- 1 cup chopped cucumber
- 1 cup chopped tomato - remove the seeds
- 1/4 cup chopped red onion (1/2 onion)
- 1/3 cup chopped parsley
- 2 tablespoons Zahtar
- 1 teaspoon salt
- 1 tablespoon crushed red pepper (optional)
- 1 tablespoon lemon juice or juice of 1/2 lemon
- 1/2 cup Extra Virgin Olive Oil
- Mix all the ingredients in a mixing bowl.
- Cover and refrigerate for at least an hour before serving.
