Description
This recipe for meatloaf calls for a neat trick: The seasoned meat mixture is spread into rectangle, topped with sausage and pineapple down the middle, and then rolled up into a log to enclose, for a welcome surprise once the meatloaf is baked and sliced. And instead of topping it with ketchup the old-fashioned way, here the loaf is coated in seasoned breadcrumbs. Serve with a watercress salad and couscous, or your own favorite sidekicks.

- Preheat oven to 350°F.
- Season the ground meat with salt, pepper, mint, oregano, and parsley.
- Place plastic wrap in the bottom of a rectangular pan. Place ground meat on top of the plastic wrap. Place the sausage and pineapple on the meat and sprinkle with more herbs. Using the plastic wrap, carefully roll up the meat into a log shape. Mix the breadcrumbs and garlic powder in a shallow dish and roll the meat in the crumb mixture.
- Bake for about 45 minutes.
- Remove from the oven and serve with watercress salad and couscous.
