This recipe made the fanciest meatloaf I have ever had. My guests loved it. A few small changes I made was using tomato paste as I had no tomato and omitting the coriander as I knew several of my guests do not like the taste of it. Covering it in ham gave it such a nice salty flavor and the puff pastry kept everything moist and delicious. I had a few requests for this recipe at the end of the night, so it was definitely a winning recipe.
