With such ingredients as cranberry sauce, dried cranberries, brown sugar and barbecue sauce, this meatloaf will be one to make for years to come.

Ingredients

  • 3/4 cup crackers (crushed)
  • 1/2 cup cranberry sauce
  • 2 tablespoons dried cranberries
  • 2 eggs
  • 1/4 cup brown sugar
  • 2 tablespoons onion (chopped)
  • 1 1/2 teaspoons salt
  • ground black pepper
  • 700 grams ground beef
  • 1/2 cup bbq sauce

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large bowl, mix the crackers, cranberry sauce, cranberries, eggs, sugar, onion, salt, and pepper to taste.
  3. Add the ground beef and mix.
  4. Place in a greased baking pan and bake for 30 minutes.
  5. Take out of the oven and spread the BBQ sauce on top. Bake for another 10 minutes.
  6. Take out and let it cool for 10 minutes. Cut and serve.

This might not sound good initially, but after one bite, I was impressed. The meat gets a red tint to it that is kind of different, but no one minded at all after they tried it. I liked the dried cranberries in it, but topping it with cranberry sauce doesn't work well. Instead, take wax paper and press the meatloaf down in a rectangular shape that is long and not too thick. Then, take the cranberries and sprinkle them over the top of it with a little of the cranberry sauce. Don't add too much. Add some roasted almonds and fresh spinach leaves. Then using the wax paper to help you, roll the meat loaf up as if it were a jelly roll. Place it on a cookie sheet and bake.
