  • 2/3 cup breadcrumbs (white)
  • 3/4 cup milk (+ 6 tbsp)
  • 1 1/2 pounds ground beef
  • 2 eggs
  • 1 onion (peeled and finely diced)
  • 1 tablespoon mustard
  • 3 tablespoons butter (or margarine)
  • 2 1/4 pounds potatoes (peeled and halved)
  • 1 1/4 pounds carrots (peeled and sliced)
  • 2/3 pound frozen peas (thawed)
  • 2 teaspoons grated nutmeg
  • 2 teaspoons cornstarch
  • fresh parsley (to garnish)

Directions

  1. Preheat oven to 325°F. Mix breadcrumbs with 6 tbsp milk and let absorb then mix with ground beef, eggs, onion and mustard. Season then form into an oval-shaped loaf. Place in a greased roasting pan and bake for 1 hour 30 mins.
  2. Meanwhile, cook potatoes in boiling salted water for about 20 mins. Heat 1 tbsp butter and sauté carrots briefly. Add 3/4 cup water and cook for 5 mins then add peas and cook for another 5 mins.
  3. To finish, heat remaining butter and milk. Drain potatoes then add warm milk and mash. Add nutmeg and season to taste. Remove meatloaf from oven and keep warm. Strain pan juices into a clean saucepan and add 3/4 cup water, bring to a boil and whisk in cornstarch. Season to taste. Slice meatloaf and serve with vegetables, mashed potatoes and pan sauce. Garnish with parsley.
