Ingredients

  • 500 grams ground beef
  • 1/2 cup tomato sauce
  • 1 teaspoon dijon mustard
  • 1 egg
  • 1/2 green bell pepper (cut into strips)
  • 1 poblano pepper (roasted, peeled, and cut into strips)
  • 1 can red bell peppers (cut into strips.)
  • 3 tablespoons feta cheese (/goat cheese)

Directions

  1. Preheat the oven to 200C.
  2. Mix the ground beef, tomato sauce, mustard, and egg together in a bowl.
  3. Cover the inside of a rectangular pan with the meat mixture. Make sure to leave a hollow space in the center.
  4. Fill the hollow space with the bell peppers, goat cheese, and the poblano pepper.
  5. Cover the layers of vegetables and cheese with a layer of ground beef.
  6. Bake for 35–45 minutes.
  7. Remove from the oven, let cool, and serve.

This was a very interesting way to prepare meatloaf. I've never had it stuffed before. I added some Worcestershire sauce to the meat for added flavor. All of the flavors worked really well together, I enjoyed this a lot.
