The meatballs were perfect for the Meatball Sub Cupcakes also found on Yummly. I used Parmesan reggiano and whole wheat bread crumbs and DID NOT add the water as this seemed wrong. They were very tasty and will make again.

So good! Used fresh herbs and added garlic and basil to the cheese mixture. Also used mini meatballs and made them in mini muffin pans so they we bite size.... great idea!!! Easy to pop them in your mouth! Great to dip in marinara sauce!

This is going into heavy rotation at our house. Huge hit with the adults and the kids, and it was SO easy to make. I may try them as mini cupcakes next time, rather than full-size ones, because the dough didn't go up the sides much.
