Ingredients

  • vegetable oil
  • 1 garlic clove (peeled and minced)
  • 1/2 onion (peeled and minced)
  • 1/2 leek (diced)
  • 200 grams ground beef
  • 1 tablespoon tomato sauce
  • salt
  • 4 roasted red bell peppers (seeded)
  • 100 milliliters heavy cream
  • 50 grams gorgonzola cheese

Directions

  1. Start by sauteing together the garlic, onion, and leek.
  2. Once softened, add the ground beef and slowly simmer 5 minutes.
  3. Right before the beef finishes cooking, add the tomato sauce. Salt to taste.
  4. Remove from heat and set aside to cool.
  5. Once the filling has cooled, carefully stuff the peppers.
  6. For the sauce, in a saucepan set the heavy cream and gorgonzola cheese to melt on low heat.
  7. Plate the stuffed peppers with the sauce on top.

When I made this recipe last week for dinner, I didn't realize how fast my family would devour it. The peppers were crunchy and the meat was bursting with flavor fullness. Adding the gorgonzola sauce was what topped it off. I will make this dish again and give it 4 stars.
