Infused with the fresh flavors of green tea, this creamy panna cotta is made with matcha powder for a creamy dessert that harnesses the health benefits and unique flavor of matcha green tea. Sweetened with turbinado sugar and thickened agar, a natural thickening agent derived from algae, this dessert tastes great while keeping you healthy.

Ingredients

  • 1 teaspoon tea (Matcha)
  • 400 milliliters cream (liquid)
  • 60 grams turbinado sugar
  • 60 milliliters milk
  • 1 teaspoon agar agar
  • 1/2 teaspoon vanilla (ground)
  • 300 milliliters green tea
  • 1 tablespoon agar agar

Directions

  1. Combine Matcha tea with two tablespoons of liquid cream in a medium saucepan, mix well.
  2. Add the remaining cream, and stir over medium heat.
  3. Do not boil the mixture.
  4. Add sugar, stir.
  5. Add agar agar, stir to dissolve.
  6. Remove pan from heat and let stand for 10 minutes.
  7. Add the milk, then the vanilla.
  8. Pour into small glasses.
  9. Brew green tea, let cool.
  10. In a saucepan, mix the agar with a little water. Bring to boil.
  11. Add the cooled green tea and let stand for ten minutes.
  12. Pour the green tea mixture on the Matcha cream and refrigerate for 30 minutes to 1 hour.

Cooking with tea, rather than drinking it, was a new idea for me. I enjoyed the creaminess of the dairy with the infused flavors of the tea. I garnished each glass with a sprig of mint.
