Ingredients

  • mashed potatoes
  • cheese (Montasio, substitute with Asiago cheese)
  • mortadella
  • parmesan cheese
  • 1 egg
  • breadcrumbs
  • butter (in pieces)
  • 3 tablespoons milk

Directions

  1. Preheat the oven to 180C.
  2. Place the mashed potatoes in a bowl and dilute with a few tablespoons of milk, add the cheeses and the Mortadella cut into pieces, a few tablespoons of grated parmesan cheese, and an egg.
  3. Line a baking dish with wax paper, place the mixture inside, level it, sprinkle with breadcrumbs and pieces of butter.
  4. Bake for approximately 30 minutes.
  5. Place the baking dish in the broiler until golden.

We made this pie out of our leftover mashed potatoes. The pie was yummy! The recipe does not say how much cheese to add but I took liberty and added a bunch. I went for white American, Provolone and Asiago, then grated Parmesan cheese on the top. I will make this again anytime we have enough leftover mashed potatoes.
