Creamy and full of robust flavor, this mashed cauliflower is seasoned with fresh thyme, lemon, and nutmeg for a delectable savory side. Cook the cauliflower first and then blend in a food processor before seasoning. This recipe recommends cooking the cauliflower in a mixture of half milk, half water, but these quantities can be adjusted to personal preference.

Ingredients

  • 2 servings
  • 1 cauliflower
  • 400 milliliters water
  • 400 milliliters milk
  • olive oil (to taste)
  • 8 sprigs fresh thyme
  • 2 teaspoons margarine
  • nutmeg (to taste)
  • 1 lemon
  • salt (to taste)

Directions

  1. Cook the cauliflower in a mix of water and milk. Ideally the mix should be half water and half milk, because I´ve made it with only milk and found it too rich.
  2. After cooking, blend everything well with a food processor or mixer.
  3. Add the olive oil, thyme, margarine, nutmeg, lemon zest, and salt while mixing.
  4. Serve with a drizzle of olive oil over the top.

This cauliflower was hearty and pleasing. I used butter rather than margarine and sprinkled some toasted breadcrumbs on top just before serving. Shredded pork could be stirred in as well.
