Turned out great. Only 2 of us so I used 1 head and I used real butter and added some cream chord to give it a thicker consistency. I have a vitamix so it really puréed it 🤔. I'm going to bake it in the morning.

I've really liked it..made half with butter and the other half with olive oil..I prefer the one with butter. Too bad my husband says he doesn't like cauliflower but at the same time he served himself twice.

This dish turned out really well. I loved the lighter texture compared to potatoes. I went a little overboard with the garlic (totally my fault). I think the consistency would have been more uniform with a food processor but I will definitely make this again.

I put some brown butter in it instead of the olive oil. if you like it on the nutty side. Sometimes I do carrot/cauliflower 50/50 when I want it sweeter. Goat cheese is also a great addition if you like that kinda thing. Let's face it, the possibilities are endless.
