If a show-stopping, fresh and indulgent dessert is needed to wow a crowd, then why not try these Mascarpone and Gelatin Delights. Mascarpone is an Italian cream cheese that uses lemon juice, vinegar and citric acid to make it a sweet treat. The cream cheese is paired with Greek yogurt, egg whites powdered sugar, gelatin and sugar. Then, just when it tastes amazing, adding fresh raspberries provides a powerful punch of perfection.

Ingredients

  • 1 box gelatin (strawberry or raspberry)
  • 250 grams mascarpone cheese
  • 400 grams greek yogurt
  • powdered sugar (to taste)
  • 2 egg whites
  • 2 tablespoons sugar
  • 250 grams raspberries

Directions

  1. Make the gelatin according to directions, and let cool slightly.
  2. Whisk the mascarpone with the Greek yogurt to a creamy and homogeneous mixture.
  3. Gradually, add the powdered sugar to taste.
  4. Whisk the egg whites with two tablespoons of sugar, and gently mix with the cheese and yogurt mixture.
  5. Refrigerate.
  6. Pour the gelatin in dessert dish (save a little bit for decoration), and let it solidify.
  7. When gelatin is ready, cover with yogurt cream and mascarpone, flatten, and refrigerate.
  8. In a saucepan, heat the berries with a little sugar, and stir for a few minutes.
  9. When it cools, pour this jam over the mascarpone and Greek yogurt.
  10. Garnish with crushed meringue and gelatin in various shapes (use cookies cutters).

I made this dessert for a small group and we really enjoyed it. It was easy and I could do it ahead of time, which is always appealing when cooking for others. Using greek yogurt and mascarpone ensures it's not too sweet of a dish. And the berries I had were sweet enough that I only had to use a dash of sugar while cooking them.
