Masala-Baked Cauliflower and Raita

Ingredients

  • 2 heads cauliflower (cut into florets)
  • 2 tablespoons butter
  • 1 teaspoon Garam Masala
  • 1 teaspoon turmeric
  • 2 cups yogurt
  • 2 tablespoons sesame seeds
  • 3 tablespoons fresh mint leaves (finely chopped)
  • 1/2 teaspoon cayenne

Directions

  1. Preheat oven to 425°F. Grease a baking dish with butter. Cook cauliflower in salted, boiling water for 5-6 mins then drain, run under cold water then transfer to prepared pan. Heat butter in a frying pan, add garam masala and turmeric and cook for 30 seconds, until fragrant. Add 2/3 cup yogurt and simmer for 1 min then season. Pour over cauliflower and sprinkle with sesame seeds. Bake for 18-20 mins.
  2. For raita, mix remaining yogurt with mint and cayenne. Season with salt and serve with cauliflower.
