- Poke holes all over the sweet potatoes with a fork and place them on a large microwave-safe plate. Microwave on high until the potatoes are very fork-tender, 15-20 minutes. Carefully remove the plate from the microwave and allow the sweet potatoes to cool until cool enough to handle, about 15 minutes. Microwave in batches if necessary.
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.

I probably didn't have enough sweet potatoes, nor did I have enough patience to wait for them to cool before scraping the insides into a bowl. There's got to be an easier way to do that, maybe skinning them and boiling them like you would for regular mashed potatoes? This recipe ended up being too sweet for me and too visually off-putting for my picky toddlers. I was hoping the marshmallows would win them over but I couldn't get them to try one bite.
If I make this again, I'd make the potatoes differently and add the marshmallows after pulling it out of the oven.
