Marmalade and Zucchini Cake


Zucchini bread is such a great option for gift giving and also for tucking into the freezer for those times when you have surprise guests and want something to offer along with a cup of tea of coffee. This is just such a recipe, with a twist: In addition to the usual ingredients (and that means zucchini, of course, as well as brown sugar, cinnamon, and walnuts) the batter includes marmalade, for extra sweetness and fruit flavor. Use your own favorite variety.


280 grams flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
100 grams brown sugar
100 milliliters oil
280 grams zucchini (grated)
125 grams marmalade (soft)
100 grams chopped walnuts


1Preheat oven to 180 degrees Celsius.
2Grease rectangular baking pan, and line with parchment paper. In a bowl sift the flour, baking powder, baking soda, cinnamon, and salt. In another bowl, beat the eggs and sugar to a whitish mixture. Add the oil, the grated unpeeled courgette, and the marmalade. Mix well. Add the flour mixture and mix until smooth..
3Add the chopped walnuts and mix well. Pour the batter in the cake pan and bake for about 40 minutes (toothpick test).
