Marmalade and Zucchini Cake

Ananás e Hortelã


  • 280 grams flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 100 grams brown sugar
  • 100 milliliters oil
  • 280 grams zucchini (grated)
  • 125 grams marmalade (soft)
  • 100 grams chopped walnuts


  1. Preheat oven to 180 degrees Celsius.
  2. Grease rectangular baking pan and line with parchment paper. In a bowl sift the flour, baking powder, baking soda, cinnamon, and salt. In another bowl, beat the eggs and sugar to a pale mixture. Add the oil, the grated unpeeled zucchini, and the marmalade. Mix well. Add the flour mixture and stir until smooth.
  3. Add the chopped walnuts and mix well. Pour the batter in the prepared pan and bake for about 40 minutes.
