Ingredients

  • 800 grams fresh salmon (with skin)
  • 1/2 teaspoon peppercorns
  • 1 teaspoon cumin seeds
  • 1 tablespoon coriander seeds
  • 50 grams granulated sugar
  • 35 grams salt
  • 50 milliliters vodka (or aquavit)
  • 100 grams sour cream
  • 1 bunch fresh dill

Directions

  1. Dry salmon with a paper towel, remove fish bones, if any with tweezers.
  2. In a mortar bowl, crush the peppercorns, cumin and coriander seeds.
  3. Combine with sugar, salt and vodka.
  4. Place the salmon in a plate; cover completely with the spices/vodka mixture .
  5. Wrap the plate with plastic and marinate in the fridge for about 24 to 48 hours.
  6. Dry the salmon with a paper towel to remove any remaining seeds.
  7. Place it on a plate and slice it finely.
  8. Mix the sour cream with fresh dill and serve with the salmon.

Obviously the longer you marinate this the better it will taste and I went for the full 48-hours to marinate and I will never prepare it shorter than that. I loved this recipe and will make it again for sure.
