Appetizers just got interesting again. Salty, offset by the mild flavor of bread and cheese. Mushrooms and anchovies will draw your crowd’s attention. These will be the first to be devoured.

Ingredients

  • 500 grams mushrooms (sliced)
  • 1 cup vinegar
  • 1 cup water
  • 1 teaspoon salt
  • 3 cloves garlic (minced)
  • olive oil
  • parsley (minced)
  • bread
  • anchovies
  • cheese (Aged, shaved)

Directions

  1. Place the mushrooms into a bowl with the vinegar, water, and salt. Allow to marinate for several hours.
  2. Drain the mushrooms, add the garlic and parsley and cover with olive oil.
  3. Toast the breads and then layer with the mushrooms, anchovies, and cheese. Drizzle with some of the oil from the mushroom marinade.

Made these as an appetizer, and they were the first things gone. Make sure to toast the bread lightly. Too much and it will crumble, but not enough makes it soggy. The anchovies and the marinated mushrooms have a salty taste, but the bread and cheese offset it well.
