Ingredients

  • 2 1/2 chicken breasts (skinned, boneless)
  • 1/2 cup caesar salad dressing
  • 1/4 cup hot sauce
  • 3 cups lettuce
  • 1/4 red onion (sliced in rings)
  • 1 tomato (sliced)

Directions

  1. Grease a skillet with cooking spray on medium-high flame.
  2. Place the chicken breasts in the skillet and let cook until golden brown on both sides.
  3. Remove the chicken breasts from the skillet, let cool for 10 minutes, and slice into strips.
  4. Mix the caesar salad dressing with hot sauce in a bowl, along with the chicken breasts. Let it sit in the refrigerator for 30 minutes.
  5. Spread evenly the lettuce, onion, and tomato on 2 plates.
  6. Place the marinated chicken breasts on the plates and serve.

This is a different take to chicken salad that tasted pretty good. I think it would be nice to take along to a potluck dinner. I put down a bed of mixed greens and put the marinated chicken on top for a nice presentation.
