Requiring just one skillet pan for preparation, these Marinated Boletus Mushrooms are infused with the flavors of sauteed garlic and onion, bay leaf, clove, thyme, and sherry vinegar. Serve these deliciously flavored Marinated Boletus Mushrooms on slices of toasted bread along with a fresh mixed greens salad for a tasty and flavorful lunch.

Ingredients

  • 1/2 onion (diced)
  • 400 milliliters olive oil
  • 2 tomatoes (medium)
  • 80 milliliters sherry vinegar
  • 500 grams wild mushroom (fresh boletus edulis or other, cleaned)
  • 1 bay leaf
  • 3 cloves allspice berries (or 3)
  • 4 sprigs thyme
  • salt

Directions

  1. Saute the onion in a few tablespoons of oil until transparent.
  2. Puree the tomato with the sauteed onion and return to the skillet. Cook until the mixture thickens.
  3. Add the rest of the oil, vinegar, mushrooms, bay leaf, cloves, and thyme, along salt to taste. Heat in the skillet until the oil begins to bubble. Remove from heat, place the contents of the skillet into a bowl, and allow to cool.

I have made quite a few of marinated boletus mushroom recipes before and nothing can compare to this specific recipe. It was so quick and easy to make; I could not believe how quickly I was done making them. A true 5 star recipe I can make any day of the week.
