Description

Pudding doesn’t have to just be for kids lunches and after school snacks. Maria’s Orange and Almond Pudding uses liquid caramels, sugar, egg yolks, whole eggs, ground almonds and orange juice. All mixed together in this perfect pudding ready to eat any day of the week. Why not make it for an extra special after school snack? Or include it on a holiday dinner menu for a way to wow the crowd.

Ingredients

caramels (Liquid, to spread on the mold)
water (17 cl.)
250 grams sugar
8 egg yolks
4 whole eggs
100 grams ground almonds
1 orange juice (and zest)

Directions

1Preheat oven to 160 degrees Celsius.
2Start by spreading the caramel in the cake mold.
3Heat water and sugar in a saucepan, without boiling.
4In a bowl, beat the eggs and yolks. Gradually add the sugar syrup, stirring continuously.
5Add the ground almonds, the orange juice, and finally, the zest. Stir well, mixing all ingredients, and pour into the cake pan.
6Bake in a water-bath for 50 minutes.
