  • cupcake (Margarita, Recipe)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup sugar
  • 3 eggs (room temperature)
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 limes
  • 1/4 cup fresh lime juice (I use the two limes I zested you could substitute with ¼ cup margarita mix, the liquid prepared type)
  • cupcakes (I’ve made these, both ways and they were equally delicious)
  • 1/2 cup butter (room temperature)
  • 1/2 cup shortening
  • 5 cups powdered sugar
  • 2 tablespoons tequila (Use margarita mix to substitute the Tequila and lime juice if you prefer or want an alcohol free version)
  • 1 tablespoon fresh lime juice

    Pretty tasty! Just the right amount of sweet and a great strong lime flavoring. Icing was rich and creamy.

    Delicious! I adapted the cupcakes from a box mix for ease, and added margarita mix in place of water as was suggested. The icing was amazing-I again used margarita mix and fresh lime juice with just a tiny bit of zest. (Had to make them non-alcoholic for work). Will make again for home from scratch!
