  • 175 grams unsalted butter (softened)
  • 175 grams caster sugar
  • 3 eggs (room temperature)
  • 1 lime
  • 1 pinch salt
  • 175 grams self-raising flour
  • 40 milliliters milk
  • 4 tablespoons tequila (optional)
  • 150 grams unsalted butter (softened)
  • 500 grams icing sugar
  • 50 milliliters tequila
  • 2 limes (to decorate)

    Directions

    1. Line a cupcake or muffin tray with liners and pre-heat your oven to 150 degrees Celius (fan oven).
    2. Cream the butter and sugar together for about 5-10 minutes or until pale and fluffy. Add in the eggs one at a time, whisking each egg throughly. If the mixture starts to split, add in a tablespoon of flour.
    3. Add the zest and juice of the lime, salt and sift in half the flour. Fold together with a spatula until just combined. Add the milk and fold. Fold in the remaining sifted flour, making sure the mixture is uniform, try not to over mix.
