• 3 pounds pork loin roast, boneless
  • 2/3 cup maple flavored syrup
  • 3 tablespoons dijon mustard
  • 2 tablespoons cider vinegar
  • 2 tablespoons soy sauce
  • salt
  • black pepper
  • 1 pound carrots (pared and quartered lenghtwise*)
  • 6 red potatoes (medium, scrubbed and halved)


  1. Stir together maple syrup, mustard, vinegar, soy sauce, salt and pepper. Spread evenly over pork roast and place in a shallow roasting pan, surrounded by carrots and potatoes. Roast in a 350 degree F. oven about 40 minutes to 1 hour (20 minutes per pound) until vegetables are tender and until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. Remove from oven; slice roast to serve with vegetables.
