Start toasting a slice of bread because this Mango and Tangerine Jelly is just begging to be spread. Featuring fresh ripe mangoes, fresh tangerine juice and zest adds a bit of citrusy zing to this smooth jelly. Sweetened with brown sugar and flavored with a touch of ginger, the jelly can easily be prepared in a blender before being heated to obtain the preferred texture. Pour into sterilized jars and give this jelly as a gift, or keep it for yourself!

Ingredients

  • 2 mangoes (large, ripe, cut in chunks)
  • 2 tangerines (juice and zest)
  • 300 grams brown sugar
  • ginger powder

Directions

  1. Pour the sugar and the zest of 1 tangerine in blender, and grind for about 30 seconds.
  2. Add the mangoes, tangerine juice, and ginger.
  3. Grind until mixture is smooth.
  4. Bring to boil, then simmer for 25 to 40 minutes, until mixture thickens.
  5. Pour into sterilized jars. Turn jars upside down for few minutes to create a natural vacuum.

This jelly was a 5 star hit at my house I cannot seem to make enough of. It has a strong citrus flavor that goes great on toast and my children adore it. Its easy to spread and had the right amount of thickness to it.
