Mango and Gorgonzola Empanadas

Description

Fruit and cheese make a great pair. In these empanadas, sweet mango is paired with bold gorgonzola for the perfect combination of sweet and savory. The light and flaky crust is a great contrast to the creamy filling. You only need 5 ingredients and about 35 minutes to pull these balanced little pockets together. These are a great snack to make as an appetizer for entertaining or have them as a meal with a a lightly dressed salad.

Ingredients

1 mango
goat cheese
blue cheese
16 empanada wrappers (you can substitute wonton wrappers)
1 eggs (beaten)

Directions

1Preheat the oven to 200 degrees Celsius.
2Cut the mango and cheese into as small of pieces as possible. The cheese will be easier to cut if it is cold.
3Mix the mango and cheese pieces together in a bowl and set aside.
4Cover a baking tray with parchment paper and lay out the empanada wrappers.
5Place a moderate amount of filling in the middle of each wrapper.
6Set another empanada wrapper on top of each one and use a fork to seal the edges.
7Brush the tops with beaten egg and bake for 10-12 minutes until golden.
