Fruit and cheese make a great pair. In these empanadas, sweet mango is paired with bold gorgonzola for the perfect combination of sweet and savory. The light and flaky crust is a great contrast to the creamy filling. You only need 5 ingredients and about 35 minutes to pull these balanced little pockets together. These are a great snack to make as an appetizer for entertaining or have them as a meal with a a lightly dressed salad.

Ingredients

  • 1 mango
  • goat cheese
  • blue cheese
  • 16 empanada wrappers (you can substitute wonton wrappers)
  • 1 egg (beaten)

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Cut the mango and cheese into as small of pieces as possible. The cheese will be easier to cut if it is cold.
  3. Mix the mango and cheese pieces together in a bowl and set aside.
  4. Cover a baking tray with parchment paper and lay out the empanada wrappers.
  5. Place a moderate amount of filling in the middle of each wrapper.
  6. Set another empanada wrapper on top of each one and use a fork to seal the edges.
  7. Brush the tops with beaten egg and bake for 10-12 minutes until golden.

I have made plenty of beef empanadas before and none of them were quiet like this one. It was filled with the perfect blend of flavors and it had a little kick to it that I enjoy. Baking it gave it a nice crusted over top that was quite enjoyable. I will prepare this 5 star dish any day.
