  • 2 mangoes (very ripe)
  • 2 tablespoons honey (or to taste)
  • 200 milliliters coconut milk
  • 1/2 lime juice

    Directions

    1. Grind the mango pulp until pureed. Add honey to taste, the coconut milk, and the lime juice. Mix well and refrigerate for 30 minutes.
    2. Place the mixture in ice cream machine and follow the manufacturer's instructions.
    3. Place in a container and store in the freezer.
    4. Remove from the freezer about 15 minutes before serving.
    5. Note: Instead of honey you can sweeten with 1/4 cup of light brown sugar.
