Ingredients

  • 2 cups water
  • 1 teaspoon salt
  • 1 cup quinoa
  • 3 mangoes (peeled and chopped)
  • 1 cup cucumber (chopped)
  • 1/2 cup red bell pepper (diced)
  • 1/3 cup green onions (chopped)
  • 2 cups baby spinach (packed fresh)

Directions

  1. Heat water and salt in a medium saucepan; bring to boil.
  2. Add quinoa and cook until tender but still firm to bite, stirring occasionally, about 12 minutes.
  3. Remove from heat and let rest for 5 minutes.
  4. Transfer to medium bowl. Add mango, cucumber, red pepper and onion to quinoa. Mix well.

Good recipe, healthy, easy to make, but I wonder if it needs a dressing? It seems to me it needs something liquid to hold everything together a bit more. Hmmm, not sure. What do others think? If I would add a dressing it would be something light, maybe a little sweet.
