- 2 lb. pork loin roast (boneless)
- 1/4 cup orange marmalade
- 8 oz. mandarin oranges (drained)

Directions
- Place roast in shallow pan, coat with marmalade and place in preheated 350 degree F. oven. Roast for about 40 minutes (20 minutes per pound) until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes before slicing. Garnish servings with mandarin oranges.
