  • 2 lb. pork loin roast (boneless)
  • 1/4 cup orange marmalade
  • 8 oz. mandarin oranges (drained)

    Directions

    1. Place roast in shallow pan, coat with marmalade and place in preheated 350 degree F. oven. Roast for about 40 minutes (20 minutes per pound) until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes before slicing. Garnish servings with mandarin oranges.
