  • 2 tablespoons cumin seed
  • 2 tablespoons coriander seeds
  • 8 fresno chiles
  • 20 kaffir lime leaves
  • 15 shallots
  • 20 cloves garlic
  • 1 cup oil
  • 2 tablespoons salt
  • 2 quarts coconut milk
  • 6 pounds pig trotter (cleaned)
  • 2 cups red bell pepper (sliced)
  • 1 quart mushrooms (sliced and smoked)
  • 1/4 cup cilantro stems (minced)
  • 1 tablespoon black pepper (ground)
  • rice vinegar (As needed)

    Directions

    1. 1. Combine eggs, scallions, ginger and salt. Beat well
