  • 2 1/2 pounds turkey wings (4 wings equal about 2 1/2 lb.)
  • 2 teaspoons olive oil
  • 1 cup dry white wine
  • 5 cups unsalted chicken broth
  • 2 rosemary sprigs (fresh)
  • 3 garlic cloves
  • 5 tablespoons unsalted butter
  • 5 tablespoons all purpose flour
  • 1/2 teaspoon salt (for roux)
  • 1/4 teaspoon black pepper (for roux)
  • 1/2 teaspoon salt (for gravy)
  • 1/4 teaspoon black pepper (for gravy)
