These savory morsels are quick and easy hors d'oeuvres to enjoy with cocktails. They feature an unusual flavor profile provided by shallots, parmesan cheese, and mackerel fillets. The tender, crumbly dough is made with hazelnut flour in additon to all-purpose flour. Hazelnut flour can be found at more supermarkets, or you can make it yourself by grinding blanched hazelnuts in the food processor. Double the recipe to bake a big batch.

Ingredients

  • 200 grams self rising flour
  • 60 grams hazelnut flour
  • 6 grams salt
  • 10 grams parmesan cheese
  • 80 grams butter
  • 60 grams mackerel fillets
  • 1 shallot
  • dill
  • 1 egg

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Add the flours, salt, cheese, and butter to a food processor. Turn on the food processor and add the egg. Combine well.
  3. Add the mackerel, shallot and dill and continue processing.
  4. Shape the mixture into balls weighing 8 grams each, flatten them and place them on a parchment paper-lined baking sheet.
  5. Bake for approximately 20 minutes.

The fish adds a salty flavor I liked. I brushed a little milk on each dough ball to get a golden top. These were good by themselves, but also work served with mackerel soup or fried cod.
