Ingredients

  • 250 grams macaroni
  • 200 grams salami (Italian, sliced)
  • 1/2 bunch thyme leaves (stripped from stems)
  • 1 courgette (trimmed and cut into batons)
  • 200 grams cherry tomatoes (cut in half)
  • 3 shallots (peeled and sliced)
  • 4 eggs
  • 350 milliliters semi-skimmed milk
  • 50 grams parmesan (grated)
  • 50 grams gouda (grated)

Directions

  1. Preheat oven to 350°F. Cook macaroni in boiling salted water according to package directions. Drain then toss with salami and vegetables and place in a greased baking dish.
  2. Mix eggs, milk, cheese and thyme. Season, add nutmeg then pour over macaroni mixture. Bake for about 45 mins. Garnish with thyme and serve.
