I have made this dish several times and it always is a hit. The roux and eggs make this so unctuous. I always double the recipe and use 3 different cheeses. As long as one of them is smoked you can’t go wrong. Highly recommended!

Perfect . Used essence by emeril, thyme, salt, pepper. Instead of dry mustard used grey poupon

Too much mustard. I’d make it again and halve the mustard. Otherwise easy, cheesy.

Good flavor, but I should have gone with my gut and used corn starch for the roux... less grainy than flour rouxs.

delightful every time i make it. it honestly did not need any alterations. do make sure you add the milk slowly, though, it you'll end up with a slightly grainy dish.

I made this but used Lactaid because didn't have regular milk. Soy milk was out of the question. Also only had wheat flour, but a little of corn starch helped with the sauce. Used wheat macaroni and added broccoli to it. Very good, with some sriracha on it!

I have to say, this Mac and Cheese was amazing. I didn't change a thing. I might have used more cheese than called for, but it made a great topping. I finished it in the oven which made the cheese topping nice and bubbly. Delicious!!

Use organic heart healthy grass-fed butter and cheese. Same with milk, full fat, organic. Low fat products are not healthy. Fake butters are ruining people's health. They replace fat with more sugar, more toxic hydrogenated oils... Never buy low-fat anything. The full fat products are healthy and not inflammatory as long as one chooses the organic version. Since this is not a 'heart healthy' recipe, I had to make a few modifications. I used 280 g of cheese instead of a pound, used half the salt, and substituted 2% milk and whipped margarine for the whole milk and butter. Even with these modifications, it turned out great.
