  • 500 grams macaroni
  • 1 egg
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon mustard
  • 720 milliliters milk
  • 75 grams onion
  • 1 bay leaf
  • 1 teaspoon paprika
  • 225 grams cheddar (but you can add more)
  • salt
  • pepper
  • breadcrumbs
  • 3 tablespoons butter
  • 100 grams breadcrumbs


  1. Preheat the oven to 350°F (gas mark 6)
  2. Put the macaroni in a pot of boiling salted water. Cook until al dente.
  3. Melt the butter in a bowl.
  4. Add the mustard and flour. Mix for about 5 minutes.
  5. Add the milk, onion (cut into small pieces), paprika and bay leaf.
  6. Cook over very low heat for about 10 minutes, until tiny bubbles form. Remove pan from heat and remove the bay leaf.
  7. Add egg slowly while stirring.
  8. Mix with ¾ of the cheddar.
  9. Add salt and pepper.
  10. Stir the macaroni and the cheese sauce together in a baking dish.
  11. Cover with the remaining cheddar.
  12. In a skillet, brown the bread crumbs with the butter.
  13. Cover the dish with breadcrumbs and bake for about 30 minutes.
