  • 500 grams macaroni
  • 1 eggs
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon mustard
  • 720 milliliters milk
  • 75 grams onions
  • 1 bay leaf
  • 1 teaspoon paprika
  • 225 grams cheddar cheese (but you can add more)
  • salt
  • pepper
  • bread crumbs
  • 3 tablespoons butter
  • 100 grams bread crumbs


  1. 1Preheat the oven to 350°F (gas mark 6)
  2. 2Put the macaroni in a pot of boiling salted water. Cook until al dente.
  3. 3Melt the butter in a bowl.
  4. 4Add the mustard and flour. Mix for about 5 minutes.
  5. 5Add the milk, onion (cut into small pieces), paprika and bay leaf.
  6. 6Cook over very low heat for about 10 minutes, until tiny bubbles form. Remove pan from heat and remove the bay leaf.
  7. 7Add egg slowly while stirring.
  8. 8Mix with ¾ of the cheddar.
  9. 9Add salt and pepper.
  10. 10Stir the macaroni and the cheese sauce together in a baking dish.
  11. 11Cover with the remaining cheddar.
  12. 12In a skillet, brown the bread crumbs with the butter.
  13. 13Cover the dish with breadcrumbs and bake for about 30 minutes.
