  • 1 bunch asparagus (trimmed, chopped)
  • 1/4 cup cherry tomatoes (quartered)
  • 3 slices bacon (finely sliced)
  • 2 tablespoons chopped parsley
  • 3/4 cup cheddar cheese (grated)
  • 2 cups milk
  • 2 tablespoons butter
  • 1/3 cup all purpose flour
  • 2 cups macaroni (cooked)
  • 6 ounces salmon (in oil, drained, flaked)
  • 3 1/3 ounces blue cheese (creamy, crumbled)

Directions

  1. Preheat the oven to 350°F. Lightly grease four 8-oz (1-cup) ramekins.
  2. For the baked macaroni and salmon, heat milk in a saucepan on medium. Bring to boil, then remove from heat.
  3. Melt butter in a large saucepan on medium. Add flour and cook, stirring, 1 min. Remove from heat. Gradually add milk, stirring constantly until smooth. Return to heat. Cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer 3 mins.
  4. Stir macaroni, salmon, and cheese into sauce. Divide mixture among ramekins.
  5. To make topping: in a small bowl, toss together the asparagus, tomatoes, parsley, bacon, and cheese.
  6. Spoon topping over each ramekin to cover. Bake 15–10 mins, until melted and bubbling. Serve with salad if desired.
