Excellent family meal! I loved the taste but I added small strips of bacon moxed in and I didnt blend the cauliflower. Very happy overall!

I think I'm missing something here. This recipe seemed extremely bland, even with sharp cheddar. I think it's an ok blank canvas, but it needs help. I can see it being appealing if you have little ones that you're trying to trick into eating veggies. For my family, though, there just wasn't enough going on. I think if I try it again I'll roast the cauliflower, add some onion or onion powder, and maybe add some hot sauce.

I'll never make mac and cheese the old way again. Even my little one ate it without even noticing the cauliflower and I didn't even puree it, just chopped it up a bit after it was cooked. My two older kids had 3 helpings each!

I’ve made this several times. I think it’s better than regular macaroni and cheese. I might mention that I do not mash or purée the cauliflower. I leave it in med.-small chunks.

Nice and easy with hidden cauliflower! (Although one of my kids won’t eat it - they have an extra sense that detects hidden vegetables!) But it is very tasty. The sauce is enough for more than 250g of macaroni I’ve made it a couple of times now and 350g seems to work best I also use a bit less cauliflower than the recipe (trying to avoid the hidden veg detector).

I recommend adding bacon bits on the top before putting in the oven as it really does at to the flavour. Think it would be a bit bland without. This is really filling but a great winter warmer.

Fantastic! I added a breadcrumb/Parmesan/oil mixture for a topper with sliced tomato as the very last bit on top.
