Description

This vegan bread is full of sweet and nutty flavors. Psyllium, a natural fiber, binds the dough together, replacing flour and making this bread absolutely gluten free. Maple syrup and dates add an underlying sweetness and almonds add a subtle crunch to this delicious bread.

Ingredients

  • 1 cup sunflower seeds
  • 1/2 cup flaxseed
  • 1/2 cup almonds
  • 1 cup oats
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 12 dates (or less)
  • 3 tablespoons coconut oil (melted)
  • 3 tbsp. Psyllium (natural-organic grocery store or on the internet)
  • 1 cup water

Directions

  1. Mix together all the seeds and psyllium.
  2. In a bowl, whisk the water, maple syrup and melted coconut oil, then add it to the dry seed mixture.
  3. Pour the batter into a cake pan and insert the dates in the inside.
  4. Let it stand for about two hours so the chia and psyllium absorb the water and form a compact substance.
  5. If you find the mixture a little dry, add 1 or 2 more tablespoons of water.
  6. Preheat oven to 175°C and bake it for about 20 minutes.
  7. Remove the bread from the pan, turn it over and bake it for another 35 minutes.
  8. Let cool.
  9. You may also cut it into slices and freeze if you won't eat it immediately.
