Light and fresh, this recipe for Lunchbox Tzatziki makes a great dip alongside an artisan cracker platter or as a spread on your favorite lunchtime sandwich. Tracing its origins to Grecian cuisine, tzatziki is a traditional dip served alongside meat or bread made from a combination of plain natural yogurt, cucumber, dill, and lemon. This recipe for tzatziki is flavored with garlic shoots and English mustard for a contemporary twist on the classic Greek dip.

Ingredients

  • 1 cucumber (unpeeled)
  • 1/2 cucumber (sliced)
  • salt
  • 1 natural yogurt
  • English mustard (ground, to taste)
  • 1/2 tablespoon apple cider vinegar
  • garlic shoots (to taste)
  • 1 tablespoon olive oil

Directions

  1. Grate unpeeled cucumber into a glass dish, and cut remaining cucumber into slices, and sprinkle with a pinch of salt for 15 minutes to extract the water from cucumber.
  2. Then, add the yogurt, and re-season with salt if necessary
  3. Add a pinch of ground English mustard, and apple cider vinegar.
  4. Cover with garlic sprouts, and a drizzle of olive oil.
  5. Refrigerate until serving.
