Great recipe! I did add panko crumbs to the eggplant before baking in order to improve the texture.

I liked this very much and ended up eating the entire pan for dinner. This is the first time I've eating eggplant and will do so again. It almost tasted like an appetizer I've had in the past. I did not find it bitter at all and the eggplant was great. The only reason I gave four instead of five stars is because I'm a hard rater overall.
