  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon kosher salt (or sea)
  • 2/3 cup zucchini (grated, squeeze excess liquid out with your hands or paper toweling)
  • 1 banana (medium sized ripe, mashed)
  • 1/4 cup molasses (any kind)
  • 1/4 cup full fat sour cream (or low fat, I don't recommend using fat free)
  • 1 large egg
  • 1 teaspoon vanilla extract
