  • 3 teaspoons olive oil (depending on your pan)
  • 5 hot Italian sausage links (turkey or pork Hot Italian Sausage)
  • 1 pound ground beef (we used ground beef with 10% fat, take your choice on that)
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • 1 onions (diced small)
  • 2 tablespoons minced garlic
  • 3 cups cabbage (finely chopped cabbage or coleslaw mix (This is about 10 oz. cabbage after chopping. You can replace a little bit of the cabbage with cooked brown rice if you prefer.))
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil

  • 4 bell pepper ( large red or green bell peppers, cut in half lengthwise and stem and seeds cut out)
  • 1/2 cup grated parmesan cheese (freshly grated)
  • 3/4 cup mozzarella cheese (grated, plus more to put on the top of each pepper)

This was easy to make and was absolutely delicious. I have left overs and am going to chop everything together to put in a tortilla shell for lunch tomorrow, a spicy beef soft taco. I think it would also work well chopped up and put on a toasted sub roll, treated like a cheeseburger sub.

Excellent will make this again. Even my wife who isn't into the whole Low Carb eating enjoyed it a lot.
