  • 1 tablespoon taco seasoning (Kalyn's, or use a purchased taco seasoning)
  • 1/2 cup tomato salsa (I used Pace Picante Sauce, medium.)
  • 1/2 cup water
  • 4 ounces Anaheim chiles

  • 6 ounces black olives (drained and cut in half)
  • 2 avocados (medium, diced)
  • 1 tablespoon lime juice (for avocados)
  • 2 cups diced tomatoes (We used cherry tomatoes cut in quarters.)
  • 1 cup mexican blend cheese (or more grated)
  • salsa (to add at the table, optional)
  • sour cream (to add at the table, optional)
  • 2 packages rice (12 oz. each frozen cauliflower)
