  • 5 pounds boneless, skinless chicken breast
  • 1 quart buttermilk (OR soured milk)
  • 1 yellow onion (medium sized sweet, sliced)
  • 1 teaspoon baking powder
  • 4 cups unbleached white flour
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper (scant)
  • 2 teaspoons salt
  • 1 tablespoon garlic powder
  • canola oil (Plenty of)

    1. Pour the buttermilk into a large mixing bowl and stir in the sliced onion, salt and cayenne pepper.
    2. Slice the chicken breasts into strips about 1 ½ inches wide. Place the chicken in the buttermilk and marinate overnight in the refrigerator. If you do not have the time to marinate overnight, a few hours will suffice…but the result is definitely better with about 12 hours of soaking.
    3. In a mixing bowl, combine the flour and seasonings.
