  • 2 1/2 cups whole milk
  • 1 cup half & half
  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup onion (diced)
  • 1 tablespoon fresh thyme (chopped)
  • 2 cloves garlic (Fresh, finely minced)
  • 2 tablespoons all purpose flour

  • 3 teaspoons hot sauce (or Tabasco)
  • 2 1/4 cups gouda cheese (grated)
  • 1 1/2 cups muenster cheese (grated)
  • 1 1/4 cups gruyere cheese (a little less than 4 Ounces, grated)
  • 1 pound shrimp (raw, deveined, tail removed)
  • 3/4 pound lobster (Cooked, chopped into chunks)
  • 3/4 pound crab (Lump, your choice)
