Ingredients

  • 1 pound penne pasta (or Large Elbow Pasta)
  • 2 1/2 cups whole milk
  • 1 cup half & half
  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup onion (diced)
  • 1 tablespoon fresh thyme (chopped)
  • 2 cloves garlic (Fresh, finely minced)
  • 2 tablespoons all purpose flour
  • kosher salt (To Taste)
  • black pepper (To Taste)
  • 3 teaspoons all purpose seasoning (Grand Diamond)
  • 3 teaspoons hot sauce (or Tabasco)
  • 2 1/4 cups gouda cheese (grated)
  • 1 1/2 cups muenster cheese (grated)
  • 1 1/4 cups gruyere cheese (a little less than 4 Ounces, grated)
  • 1 pound shrimp (raw, deveined, tail removed)
  • 3/4 pound lobster (Cooked, chopped into chunks)
  • 3/4 pound crab (Lump, your choice)
  • nonstick cooking spray (optional)

This was awesome; we added scallops to prawns, crab & lobster, all tossed in a bit of brandy. Instead of hot sauce, we used habenero chilli powder, along with a tablespoon of fresh chopped parsley. 20mins covered at 180 deg C, added a sprinkle of panko breadcrumbs, then cooked for a further 10mins uncovered. All served up with a simple green salad in a balsamic dressing.
