  • 500 milliliters olive oil
  • 500 grams lobster (heads cleaned and chopped)

  • 100 milliliters brandy
  • 1 tablespoon tomato purée
  • 1 fresh thyme (sprg)
  • 1 fresh rosemary (sprg)

    Directions

    1. Sweat the shallots and garlic in some of the oil until soft but not coloured.
    2. Add the lobster salt and pepper.
    3. Cook for 3 minutes then add the brandy and reduce the liquid to 1 tablespoon.
