Wish I had made the whole bag of spinach. It wilts down to nearly nothing. Good flavor.

Perfect! I will be eating this many more times. I added onions to the recipe. I sautéed them with garlic in the spinach

Loved these, I think this is a great twist on the typical sweeter way to eat sweet potatoes (even though they are also delicious with all the sweet goodies;)). These were very quick to pull together once the potatoes were ready and made a great all-in-one side dish for grilled meat. I would definitely use a lot more spinach next time- it shrinks down so much that the amount called for doesn't end up being much, and it is really tasty!

Yum! This recipe is a life saver. I'm a poor uni student who is struggling to find yummy easy cheap meals. This was so easy and turned out better than expected! I want to know other things to fill sweet potatoes up with now!

Very yummy! But I would put more spinach with garlic :) the potatoes skin was very crunchy and sweet, my husband loved it

Cheap, healthy, and very filling! (Not to mention - delicious) Like the recipe says, you don't need exact measurement for anything so I added a little extra spinach and nuts for a boost in protein. Definitely plan on making these much more in the future!
