This is a very thick soup. 4 cups of broth is just enough, but 5 cups will expand it a little more. I used 4 cups and got about 4 servings from this recipe. Overall it’s very flavorful and definitely a keeper! Also don’t simmer the potatoes. I would cook it at a 3 or medium heat. Otherwise it will take a lot longer than indicated to soften potatoes chunks
